Again I had stuff in the fridge that needed to be used. I abhor throwing food away so will always find a way of turning it into something edible, before it turns to something inedible.
This time it was spring onion. I had loads, so I made double this quantity.
This is a great, quick and easy option for taking an offering to a casual do like a BBQ. Just grab some crackers on the way and you are done.
Pesto is so versatile. It is a great dip, can be used as a pasta sauce, a spread on salad sandwiches, the list goes on. So get into pesto making!
YOU NEED
2 cups of spring onion, washed well and roughly chopped
1 and 1/2 cups of pine nuts
salt/pepper to taste
2 cloves of fresh garlic, peeled and minced
½ cup of olive oil
# From memory I threw a few stray walnuts on here too and I also added some red chilli for a bit more of a bite to the recipe.

Blend all ingredients
Makes circa 2 cups of dip
Takes about 10 minutes
Seems to freeze well
